I suppose if I were feeling more inspired, I could have prepared something different with the last of the bean and corn salad I made for the holiday. But I’m not, so I didn’t. Besides, I love eggs and the tortilla is long enough now a favourite format to eat them.

This time I snapped the picture, while it cooled and set, before making cuts into it.
