Vermont rural food systems—from milk to maple

A group of eleven from my graduate program are heading to Vermont this weekend. We will spend a week traveling about visiting farms and artisanal producers as part of a one week intensive course. The class is an informal exchange my department has with University of Vermont. The official topic of the course is: Vermont rural food systems: from milk to maple. Throughout the week we will be assigned to write five short reflective journal essays. The first entry is due before class begins Monday morning.
