Vermont rural food systems—from milk to maple

A group of eleven from my graduate program are heading to Vermont this weekend. We will spend a week traveling about visiting farms and artisanal producers as part of a one week intensive course. The class is an informal exchange my department has with University of Vermont. The official topic of the course is: Vermont rural food systems: from milk to maple. Throughout the week we will be assigned to write five short reflective journal essays. The first entry is due before class begins Monday morning. If all goes well with connectivity, Daily Prandium will post throughout the week and share the essays with you and you and you..

More to come..
